Wash the shank well and pour cold water over it in a pot. The water level needs to be 1-2 fingers above the meat.

Put it on the stove to boil and remove the foam from time to time. Once the broth becomes clear, add the finely chopped vegetables and spices.

Boil until the meat begins to tear apart – for about 2 hours.
