How to cook
Take the beef and cut it into pieces. Put them into a saucepan, add water and cook them with black pepper and 2 cloves. Then drain the meat and return it to the pan.
Boil the milk with crushed thyme. Sprinkle with salt and pepper and let it cool. Beat egg yolks well and pour milk over them while continuously whipping. Cover the meat with sauce and return the dish to the stove to heat without boiling.
Optionally, diet beef fricassee is served with chopped parsley.
