Fantastic Airy Mekitsi with Yeast

  • water - 1 1/4 cups, hot
  • sugar - 1 tablespoon
  • yeast - 1/2 tablespoon, dry
  • flour - about 2 cups + extra
  • salt - 1/2 tsp
  • oil - for frying


In a bowl mix the water, sugar, yeast. Add the flour with the salt and stir.

Leave for a few hours, covered with a lid. It needs to double in volume.

Then tear off balls with oiled hands and stretch into circles. Fry in heated oil until golden. Strain onto paper towels. Serve with ayran, tea or others, a pinch of mixed spices, feta cheese or jam of your choice.
