Chop the sauerkraut finely and put it in the clay pot. Add the spices and oil and stir.
Lay the pork shank on top; optionally you can marinate it for a few hours. Add a cup of water (can use red wine instead).
Put it in a cold oven (so the clay pot doesn't crack) and bake at about 302°F (150 °C) for 2 hours.
Then turn the oven off and leave it for another hour.
If baking at a lower temperature, leave it in the oven for a bit longer.
During baking you can also add vegetables of your choice.
