Village Style Chicken with Rice
Cut the chicken in pieces and cook it in a little oil and water. Add the finely chopped onion, salt to taste, pour a little water and cook on medium heat.
When the chicken is soft, add the rice and the peeled and coarsely chopped tomatoes. Top up with about 4 tea cups of hot water and cook until the rice swells.
Before presenting, sprinkle with chopped parsley.
