Lamb is cut into portions, rubbed with pepper /best white/, and placed in a baking dish. Pour the vegetable oil and one cup of water on it, wrap it in foil and bake it in the oven at 356°F (180 °C), for 2 hours. Remove from the oven and remove the sauce.
For the sauce, steam the green onion, mint and dock with tomato paste for about 10 minutes, the resultant mixture is poured over the lamb and it’s cooked in the oven for 20-30 minutes at 392°F (200 °C), until only oil remains.
