Clean the peppers, gutting them, as well cleaning them from seeds. Salt them lightly inside. Beat the eggs and mix them with crumbled cheese.
Optionally, add peeled and chopped tomato. If you need to thicken the mixture, beat with 1 tablespoon flour. Finally, go wrong with a little chopped parsley. Stuff the peppers with the mixture and dip them in a dish with flour.
Arrange them in a greased tray. Wash them with a jet of oil or olive oil. Put the stuffed peppers with eggs and cheese to bake in a preheated oven at 356°F (180 °C) for about 30 minutes or until ready.
Serve the peppers with a little chopped parsley.
