How to cook
Boil plenty of water in a saucepan and pour 2 tablespoons soda. Drop in hazelnuts and stir. You will soon see how their scales begin to peel off.
Wash nuts in a colander under running water and rub them with your hands to remove the other skins.
Already peeled hazelnuts are slightly dried with kitchen paper. Pour into a pan and add salt.
Stick them in a heated to 320°F (160 °C) oven and bake for about 10 minutes or so, stirring often, and then try to taste them.
