The cleaned fish is cut into pieces, add salt, sprinkle with black pepper and allow to stand for 1 hour. Heat half the oil and drop in for a few seconds chopped parsley/dill, or a mix of both.
Add the fish with garlic, top up water and cook 15 minutes. Carefully remove and place it in a serving plate and garnish with a few fries. Pour the sauce over and add a little lemon juice and paprika.
The remaining fat is "lit" in a container on the stove and poured at a rate of 1 tablespoon in each portion.
Garnish the fish with spices with lemon slices and olives, if desired.
