Ingredients

  • for the dough
  • potatoes - 2 lb (1 kg)
  • flour - 1 2/5 cups (350 g)
  • eggs - 1
  • butter - 2 tbsp (30 g)
  • salt - 1 pinch
  • for the filling
  • prunes - 17.5 oz (500 g)
  • sugar - 1 cube per piece
  • cinnamon - 1/2 tsp
  • for the sprinkles
  • breadcrumbs - 3.5 oz (100 g)
  • butter - 3 1/3 tbsp (50 g)
  • powdered sugar

How to cook

Carefully wash the potatoes and boil them in salted water unpeeled. Allow them to cool and then peel. Blend or grate on a grater. In a deep bowl, mix the grated potato, flour, egg, softened butter and season with salt.

Continue kneading into a homogeneous dough. Roll it out into sheets with a thickness of 1/4″ (0.5 cm). Cut rectangles from the dough with sides of about 3″ (8 cm). Wash the prunes and remove the pits.

Place 1 plum and 1 sugar cube on each rectangle. Roll each one up, so that it becomes a ball and place in boiling salted water for 4-5 minutes. Heat the butter and fry the breadcrumbs in it.

Allow the dumplings to drain from their water and put them in the fried breadcrumbs.

Before presenting, sprinkle with cinnamon and powdered sugar.
