Ingredients

  • flour - 1 1/5 cups (300 g)
  • eggs - 2
  • milk - 3 1/3 tbsp (50 ml)
  • salt

  • butter - 2 tbsp (30 g)
  • eggs - 2 - 3
  • cream - 4/5 cup (200 g)
  • sugar - 3 tablespoons
  • lemons - 1
  • salt
  • butter - to spread
  • breadcrumbs - for sprinkling

How to cook

Sift the flour and pour it in a deep bowl. Make a well in the center and put in the pre-beaten eggs, fresh milk and salt. Knead to form a solid smooth dough.

If necessary, you can add a little milk. The dough is rolled into thin crust that you must leave to dry. When hardened, cut it into noodles. Warm up about 2 quarts of water, add 1 tablespoon salt and boil the homemade noodles.

Drain the fluid using a colander. Leave the butter to soften at room temperature. Add 3 tablespoons of cream, 1 tablespoon lemon zest, sugar and yolks of eggs. Mix until you get a uniform mixture.

Mix the egg-cream mixture with the boiled noodles. Last, add the whites that are broken down into hard snow. Grease the bottom of an appropriate tray.

Pour bread crumbs on top. Put the mixture on, pour in the remaining cream and bake in a moderate oven until ready.
