Cook the macaroni in boiling salted water. Once ready, drain the macaroni (which should not be over boiled) and pour olive oil over them. In a suitable deep pot, pour the sour cream. Use very low heat to bring to a boil.
Allow the mixture to simmer on very low heat until thickened, while stirring. When thickened, pour in the boiled macaroni, sprinkle with basil and mix.
Leave it for another 4-5 minutes on the stove. Before serving, sprinkle with the remaining cheddar! Bon appetit!
