  • cherries - 2.21 lb (1 kg) or morelos
  • sugar - 4/5 cup (200 g)
  • eggs - 8.
  • biscuits - 4.5 oz (120 g)
  • lemons - 1
  • cinnamon - 1 tsp
  • powdered sugar - for sprinkling


Separate the yolks from the whites of all eggs. Beat the yolks to foam with sugar. Stir constantly and add freshly squeezed lemon juice and 1-2 tablespoons lemon peel and cinnamon.

Beat the egg whites to hard snow and carefully add them to the mix. Last, add the pitted cherries (and morelos) that are rolled in the crushed biscuits.

Stir with a wooden spoon, being careful not to drop the dough. Pour the prepared mixture into a pre-greased baking tin, the bottom of which is covered with baking paper.

Put to bake in a preheated 356°F (180 °C) oven for about 35-40 minutes. Allow to cool and then sprinkle with powdered sugar and cut it.
