"At the heart of every gingerbread cookie there`s always room for an almond, just like in my heart there`s always room for another gingerbread cookie with almond."

Ingredients

  • honey - 2/3 cup (150 g)
  • butter - 2/5 cup (100 g)
  • flour - 1 1/2 cups (360 g)
  • sugar - 1/5 cup (70 g)
  • eggs - 2
  • baking soda - 1 tsp
  • almonds - 3 1/3 tbsp (50 g)
  • for spreading
  • cream
  • eggs - 1 yolk

How to cook

Pour the honey in with the butter and heat them on low heat until the honey melts. With stirring, add the flour, sugar, beaten eggs and baking soda.

You'll get a soft dough, leave it in a warm place for 1 hour. From the dough, roll out a sheet with a thickness of 1/2″ (1.5 cm). Cut out the desired shapes and arrange them with some spaces between them in a pre-greased and floured pan.

Glaze them with a mixture of cream and egg yolk. In the center of each, put 1 almond and bake.

Bake the gingerbread cookies in a preheated 360°F (180 °C) oven for about 35-40 minutes.
