The baking powder is sifted with the flour and mixed with cinnamon, powdered sugar and lemon rind.
Make a well and put eggs inside, sherry, olive oil and freshly squeezed lemon juice. Mix until uniform.
Thoroughly washed apples are peeled and cleaned of their seeds and cores, then cut into cubes and added to the prepared batter.
Pour everything in pre-greased mold and bake in a preheated 356°F (180 °C) oven. Cake is ready in about 40-45 minutes.
