After about 1 minute of stirring, add the tomato paste, mix again for about 30-40 seconds and add the mashed tomatoes. Allow the sauce to boil over low heat and top with 2/3 cup (150 ml) of water. The sauce should be reduced and thickened slightly.
Pass it through a fine strainer and return it to the heat. After boiling, add the starch diluted with a little water with and the spices. Stir for a few minutes and remove from the heat.
Use the sauce for pasta, fried and baked dishes.
