Ingredients

  • tomatoes - 1 can + 2 tomatoes + 2 tablespoons tomato paste
  • onions - 1 head
  • garlic - 2 - 3 cloves
  • oregano - 1 tsp, dried
  • basil - 1 tsp, dried
  • salt
  • black pepper - 1 tsp, ground
  • starch - 1 tsp, optional
  • oil - about 1/5 cup (65 ml)

Preparation

Blend/mash the canned tomatoes and chopped fresh tomatoes. Heat 1/5 cup (60 ml) of oil and fry the finely chopped onion, then add the garlic once it becomes soft.

After about 1 minute of stirring, add the tomato paste, mix again for about 30-40 seconds and add the mashed tomatoes. Allow the sauce to boil over low heat and top with 2/3 cup (150 ml) of water. The sauce should be reduced and thickened slightly.

Pass it through a fine strainer and return it to the heat. After boiling, add the starch diluted with a little water with and the spices. Stir for a few minutes and remove from the heat.

Use the sauce for pasta, fried and baked dishes.
