Beat all the ingredients for the pancakes and make pancakes the usual way in a frying pan - a blob of oil and use a ladle to spread out the mixture.
Whip the cream with the jam. Smear a thin layer of the filling on each pancake.
Roll them up into tight rolls and leave them to sit for 1 hour. Cut the pancakes into stumps, arrange in a plate and cover with a sauce made from the boiled together and reduced jam, rum, water and cinnamon.
