Carefully clean and wash the strawberries. Allow them to drain their water and sprinkle with 1/3 of the sugar. The remainder of the sugar is broken down into foam with the yolks.
Stir constantly and add the flour, baking powder, grated lemon rind, vanilla, 1 pinch salt, cream and egg whites, which are beaten into hard snow. To the fluffy mixture is added the drained from the strawberries juice and mix until you get a smooth mixture.
Pour the souffle mixture into a pre-buttered pan or small shapes and bake on low (in a 248°F (120 °C) to 284°F (140 °C) oven ) until ready.
