How to cook
Parboil the ginger root in boiling water for a few minutes, then take it out, cool it and cut it into pieces. Mix the shrimp with the ginger, add the pressed garlic, soya sauce and chopped sorrel and marinate for at least 12 hours in a refrigerator.
In a suitable container, mix the sugar and tea leaves. Add 4/5 cup (200 ml) of water, and boil. Stir the mixture to completely dissolve the sugar.
Place a metal grate above this liquid and smoke the shrimp on a medium stove for 5-6 minutes.
