Wash and cut the chicken. In an oven pan, arrange the chicken portions and season them with black pepper. Cover with water and bake at 374°F (190 °C).
In a pan heat oil and saute the onion. Add the red pepper, chopped garlic, mushrooms and carrots. Bring to a boil.
Add the tomatoes. Once the tomato sauce is boiling, remove it from the heat and add the chicken /already grilled for nearly 30 minutes/.
Bake until tender, and 5 minutes before removing the dish, you pour red wine in.
