Heat oil in a pot and put the pork in to fry evenly. Then remove it, and in the same oil fry the chopped onions, carrots, peppers. Once softened, top with the tomatoes, 1 cup of hot water and the cut potatoes.
Finally, if desired, thicken the sauce with the flour diluted in a little water. Serve each potato stew portion with pork and sprigs of fresh parsley.
