Wash the potatoes, peel them and cut them like French fries, but not too thin. Put them to boil a bit - they need to remain almost raw.
Drain and gently cool them. Combine and mix all the spices and roll the potatoes thoroughly in them. Grease an oven dish and pour a little water on the bottom.
Pour the potatoes on top, pour a trickle of olive oil or oil and put to bake in moderately hot oven.
