Eggplant is cut into slices. Salt and wait to drain the bitter juice, wash and dry. Cut the eggplants and other vegetables all small.

Heat 2/5 cup (100 ml) oil and fry the peppers first. Add garlic, eggplant and zucchini, and once softened, add chopped or grated tomatoes.

Mix the dish nicely and season it with spices. Allow the stove to cook it, stirring regularly. In the summer dish must remain fat. Once ready, add the crushed parsley.

Optionally, serve with crumbled cheese and pepper.
