Take 2 whole pork fillets and rub them well with salt and pepper. Spike them evenly with the chopped garlic over the entire surface, pour the brandy over them and leave in the refrigerator for at least 1 hour to season.
Do all of this in the oven dish in which you intend to cook. Then, coat the pork thoroughly with a mixture of the soya sauce, mustard and all the spices. Cover gently with foil for baking and put it in a moderately warmed oven to bake until ready.
Then remove the foil and bake finished. Serve the pork fillet roast with a side of boiled and lightly fried potatoes, seasoned with the same spices before frying.
