Ingredients

  • peppers - 22 lb (10 kg)
  • salt - 1 2/3 cups (400 g)
  • water - 2.5 gal (10 l)
  • tartaric acid - 2/5 cup (100 g)

How to make

Select suitable peppers, wash them, and prick each one with a fork.
