"We usually make this recipe with carp but it`s also superb with mackerel! The choice is all yours!"

Ingredients

  • fish - 2 lb (1 kg) large marine fish
  • vinegar - 2 cups (500 ml)
  • carrots - 17.5 oz (500 g)
  • onions - 4 heads
  • paprika - 1/2 tsp
  • black pepper - 1/2 tsp
  • parsley - 1/2 bunch, chopped
  • salt - to taste
  • wine - 1 cup
  • olive oil - 1/2 cup

How to cook

Thoroughly clean a large marine fish. Cut it into pieces and clean the bones. Optionally, you can leave them all in.

Salt it inside and out and soak it for 30 minutes in vinegar. Put sliced carrots and onion rings in a deep tray, sprinkle them with paprika. Add black pepper and chopped parsley. Salt and distribute the fish on top. Pour on the wine and olive oil.

Wrap the tray with aluminum foil and put the fish to bake for 1 and 1/2 hours (or less). Carefully remove the baked fish. The sauce and vegetables around it can be put through a sieve or blended. Serve a piece of fish with sauce around it.
