Cut the sausages into pieces and distribute them into pots. In each, put equal parts chopped peppers, one chopped tomato, half a chopped carrot and sprinkle it with seasoning to taste.
For every pot, add a spoon of butter and a tablespoon of tomato paste, top it with 3 1/3 tbsp (50 ml) of hot water, cover and put the pots to bake at 374°F (190 °C) for 50 minutes. Then remove the lid, add 1 or 2 eggs per pot and bake until finished.
Serve with a sprig of parsley.
