  • flour - 2 lb (1 kg)
  • eggs - 2
  • cheese - 17.5 oz (500 g) cow
  • water - 1 2/3 cups (400 ml) lukewarm
  • butter - 1 packet (125 g) cream
  • yeast - 1 cube
  • sugar - 1 tablespoon
  • vinegar - 2 tablespoons, apple
  • salt - 1 pinch
  • eggs - 1 egg yolk


Dissolve the yeast with warm water, sugar and a few tablespoons of flour. Once it has intensified, add salt, apple cider vinegar, beaten eggs and sifted flour. Knead smooth and elastic dough, which should be divided into 8 balls. Cover them with a cloth and allow them to rise until they have doubled in volume.

Melt the butter. Each ball of dough is dipped in butter. Stretch the balls with your hands into a diameter of about 14″ (35 cm). Each is spread with butter and sprinkled with crumbled cheese generously. 2 sheets are stacked on top of each other and a roll is formed. You have to prepare a total of 4 of these rolls.

Put the rolls in a greased pan, rolled like snails, their ends are joined. Brush the top with beaten egg yolk with a little water and sprinkle it with lusty sesame. Allow it to rest for about 15 minutes and then put it to bake in a moderate oven at 392°F (200 °C), for about 40 minutes.
