Tear balls out of the dough. With greased hands, shape them into thin circles. Smear them with melted butter, sprinkle with crumbled feta, parsley and mixed spices / savory and fold into rolls.
Shape the rolls into twisted spirals and flatten with greased hands. Bake thus prepared gözleme in a pan with butter and olive oil on moderate heat on both sides.
Once you flip the pitas, gently push them with a spoon, to prevent them from puffing up. When ready, serve the gözleme with yogurt.
