"Tradition calls for adding at least 4-5 garlic cloves to any kyopolou, for good health and an amazing taste!"

Ingredients

  • eggplants - 2 lb (1 kg)
  • red peppers - 17.5 oz (500 g)
  • tomatoes - 2 large
  • garlic - 4 - 5 cloves
  • oil - 2 tsp
  • vinegar - 2 tablespoons, apple

How to make

Eggplants and red peppers are baked, peeled, cut and ground with a blender. The tomatoes are grated and mixed with the ground eggplants and sweet pepper.

The garlic is cut into small pieces and also added. Pour in oil and mix everything well.

Add vinegar to taste, top with split up parsley. Best served cold.
