How to cook
Cut the veal shanks into large pieces and soak them for 1 hour in water with a little vinegar. Start to stack them in a pot; cut the potatoes, beef chunks, coarsely chopped onions, peeled garlic cloves and chili peppers into large chunks or round slices.
Pour the wine in, add red and black pepper, bay leaf and salt to taste. You may add a little warm water. Place the lid on the pot and put it in the oven to bake for 4 hours.
