Dissolve the yeast in the warm water. Sift the flour on the counter and make a well in the center. Pour the yeast with some warm water, the olive oil and salt in to the well. Gradually knead an elastic dough. Shape it into a ball, wrap it in a cloth and leave it in a warm place to rise for about an hour.
Knead it again for 3 minutes on the counter, shape it into a ball again and leave it to rise for another hour. Divide the dough into balls the size of an apple.
From these balls, with your hands, shape the pizza crusts - pull until you get the desired size. You need to obtain oval shapes with a thickness of 1/4″ (0.5 cm), thinner in the middle and thicker at the edges. Put them in a suitable tray, smear them with tomato salsa.
Top with sliced mozzarella, fresh tomatoes, several anchovies, olive oil to taste, sprinkle with grated parmesan cheese and then bake the Italian pizza to readiness in a preheated oven. If desired, sprinkle with a little basil.
This is the basic recipe for Italian pizza, to which you can optionally add additional products to your liking.
