Donut Dough

  • milk - 2 cups, warm
  • yeast - 1 packet
  • flour - 2 lb (1 kg)
  • eggs - 2
  • sugar - 2 tbsp
  • salt - a pinch
  • lemons - grated lemon or orange peel
  • butter - 2 tbsp


Dissolve the yeast in a cup of warm milk. Sift the flour and along with the eggs, sugar, pinch of salt, lemon zest, butter and 2 cups of milk, knead a soft dough.

Leave it in a warm area to rise and double in volume, then roll it out into a sheet with a thickness of 3/4″ (2 cm) and using a glass, cut circles out.

Leave to rise again for half an hour. Preheat oil in a deep fryer or frying pan and fry the donuts evenly. Drain them on a grill with a paper towel underneath.

Serve them filled with cream, jam, a salty stuffing or sprinkled with powdered sugar.
