Cut the beef into pieces and fry it in the oil. Add and fry the finely chopped onion, and then the washed and sliced mushrooms. Add salt and top it up with hot water, enough to flow over the meat. Let the dish boil over medium heat.
When everything is semi-cooked, add the chillies, whole garlic cloves, diced potatoes and grated tomatoes or tomato paste. If necessary, top up with more hot water.
Close with a lid and leave the potatoes to boil until soft. Then add paprika and black pepper to taste and finely chopped parsley.
