Boil the rice in water, then drain the water, add 1 tbsp oil, stir and put a lid on it, to stay warm. Fry the chopped onion and garlic in hot oil in a large wok.
Cut the zucchini and carrots into strips and add them to the wok. After another minute, add the green and red peppers, also cut into strips. Fry the rice in pre-heated oil.
Add the vegetables, stir and serve with soya sauce. You will obtain a very beautifully colored rice, which can be served as a main dish or as a side dish.
