How to cook
The duck gizzards are cleaned well and put to boil in salted water with 1/2 sliced onion head. All the vegetables are cut into thin slices.
In a large deep pan, heat hot oil and place the onions to be fried. Then add the carrots, zucchini and peppers. Sauté for 1-2 minutes, add the drained and boiled duck gizzards.
Season the dish with spices, pour some soya sauce in and add some dissolved tomato paste. Sauté about 3-4 minutes and remove it from the heat.
