"And while we were eating our 2nd serving of duck gizzards, we were wondering - why do things taste twice as good when cooked village-style?"

Ingredients

  • duck gizzards - 21 oz (600 g)
  • onions - 2 large heads
  • carrots - 1, large
  • peppers - 1 green
  • zucchini - 1
  • soya sauce
  • tomatoes - 2 tablespoons, tomato paste
  • paprika
  • black pepper
  • cinnamon - 1 pinch
  • oil - for stewing

How to cook

The duck gizzards are cleaned well and put to boil in salted water with 1/2 sliced onion head. All the vegetables are cut into thin slices.

In a large deep pan, heat hot oil and place the onions to be fried. Then add the carrots, zucchini and peppers. Sauté for 1-2 minutes, add the drained and boiled duck gizzards.

Season the dish with spices, pour some soya sauce in and add some dissolved tomato paste. Sauté about 3-4 minutes and remove it from the heat.
