Knead dough by sifting 4/5 cup (200 g) of flour and mixing it with salt, sugar, one egg yolk, soft butter and a little water, but do not press it too much. Make it into a ball and let it stand for 2 hours in the refrigerator. Roll it out and place it in a shallow round baking dish. Pierce the dough with a fork.
Bake it for 10 minutes in an oven preheated to 464°F (240 °C). Prepare dressing by mixing the remaining flour, the two eggs with the sugar, starch and cinnamon and adding the milk. Clean the sour cherries from their pits. Place them on the dough, top with the dressing and bake in the oven at 410°F (210 °C).
Sprinkle with vanilla and grated butter. Put back in the oven to roast the butter. The pie is best served cold.
