How to cook
Cut the zucchini into thick circles, roll them in flour and fry in hot oil. Arrange them in a greased oven dish. Cut the onions, carrots and peppers into coarse pieces and sauté with a little water and oil.
Add the chopped into small pieces tomatoes and season with the spices. As soon as they become tender, remove from the heat. Pour the mixture over the zucchini, add a little oil and sprinkle with spices again.
Bake at 428°F (220 °C) for 15-20 minutes. This zucchini plakia is best served with a sprig of parsley.
