  • lamb shoulder - 4.4 lb (2 kg)
  • spring onion - 1 pc.
  • mint - 3 - 4 stalks (fresh)
  • black pepper - 1/2 tsp.
  • paprika - 1 tsp.
  • oil - 3 1/3 tbsp. (50 g)
  • salt

How to cook

Wash and dry the lamb well. You can bake the whole meat or cut into portion sizes.

Sprinkle with salt and rub it in with your hands.

Mix the soft butter with the red and black pepper. Mix well and spread this mixture on the meat.

Cover with cling film and refrigerate for 30 minutes.

Finely chop the onion and mint. Put them on the bottom of a pan and arrange the meat on top of them. Pour a glass of water and cover with aluminum foil.

Bake in a preheated oven at 200 degrees for about 3 hours, until the meat is ready.

10 minutes before removing the roast lamb from the oven, remove the foil and put it back in until it gets a nice crispy skin.

Serve the roast lamb with fresh lettuce.
