How to cook
The mackerel is cleaned from all the innards, washed and cut into pieces.
Sprinkle with salt, black pepper and leave on a plate.
Peel the onion and garlic, cut the onion into pieces or into crescents.
In a pan, heat a bit of oil, fry the onions with a pinch of salt to soften.
The canned tomatoes are mashed and poured into the pan. Add bay leaf, salt, sugar and garlic cloves.
Transfer into a 10″ (26 cm) tray, arrange the pieces of appetizing mackerel on top and sprinkle with oregano.
Bake the mackerel in tomato sauce in a preheated oven at 356°F (180 ° C) until cooked through, about 30-35 minutes and it should be done.
This oven baked mackerel is served sprinkled with parsley and lemon.
