How to cook
Cut all the vegetables and apples into cubes and steam them for 10 minutes over medium heat in olive oil and a little salt.
Once they soften well enough, pour the vegetable broth hot (can also add water). Simmer for about 25 minutes until fully cooked and pour the cream.
Season with spices and your desired amount of salt, remove from the heat and blend until it's creamy. If it is too thick, add water.
Serve the soup hot, if it is for the winter season or cold - in the summer time. Sprinkle with croutons and chopped spring onions.
