"Special recipe for all our vegetarian friends - an authentic Vegetarian Burrito!"

Ingredients

  • carrots - 1 big
  • peppers - 2 peppers prefferably of different colors
  • onions - 1/2
  • garlic - 2 cloves
  • corn - 3 tbs sweet, canned
  • kidney beans - 4 tbs canned
  • tomatoes - 1 skinned and diced
  • oil - 2 tbsp.
  • tortilla wraps - 2
  • cumin - 1/2 tsp.
  • chilli powder - 1/2 tsp.
  • salt - to taste
  • pepper - to taste
  • cheddar cheese - 2 - 3 tbs

How to cook

Slice the carrots and peppers into thin juliennes. Chop the onion and garlic finely.

Heat the oil in a pan to moderate temperature. Saute the onion and garlic for approximately 3 minutes. Add the cumin, chilly, black pepper, salt and stir well. Add the peppers, carrots and corn.

Cook for 5 minutes, then add the beans and the diced tomato. Cook for 10 more minutes. Grate the cheddar cheese.

Heat the tortilla wraps in a dry pan, one by one on the stove. Sprinkle some grated Cheddar cheese in each tortilla lenghtwise.

Place the filling on top of the cheese also lengthwise.

Fold the edge of the tortilla on top of the filling and then roll it to form your burrito.
