How to cook
Cut the onion and fry it until soft in olive oil with a pinch of salt. Meanwhile, peel and dice the potatoes. Wash well and cut into pieces the broccoli, removing the large cob at the base of the head.
Put the potatoes in the pan with the already softened onion, sprinkle another pinch of salt and fry them, stirring occasionally for about 2-3 minutes.
Pour the hot broth. If you do not have homemade vegetable broth, use one in a cube form or put a teaspoon or two of vegeta spice.
Cook for 10 minutes and add the broccoli. Cook for another 10-15 minutes or until the vegetables are very soft, then remove from the heat.
Mix the sour cream with a little salt and pour into the dish, then puree until creamy.
Serve the broccoli soup hot, sprinkled with a little olive oil.
