Clean the zucchini and cut them. Boil them in salted water, then drain them well, and mash them to a paste. Fry them lightly in 4-5 tablespoons of heated oil.
To the cooled, fried zucchini, add the milk, grated feta cheese, breadcrumbs or crushed rusks, the chopped parsley, eggs, black pepper and a little salt to taste.
Stir well to mix everything and pour it into a buttered form. Top with 2-3 tablespoons of melted butter and place the zucchini souffle to bake in a moderate oven. Serve the zucchini souffle hot.
