Mix all the spices together - put amounts to your taste. Peel and slice the potatoes, then roll them in olive oil.
In a wide skillet, heat the olive oil and put the potatoes in to sauté. Once they "crisp", add 1 cup of hot water, sprinkle with the spices, cover with a lid and allow the potatoes to stew.
Leave on the heat until the potatoes soften, the water evaporates and they begin to fry once again.
