How to cook
To prepare this au gratin, first wash the zuchini. Peel and wash the carrots.
Cut the zuchini and carrots into small cubes.
Clean and seed the pepper and dice it. Chop the onion as well.
Saute in hot oil the onion and pepper.
Add the zuchini and carrots, as well as the crushed garlic, and cook for 10-15 min.
Once cooked, set the vegetables aside to cool.
Beat the eggs, pour the milk, add the vegetables and season with salt, black peper and fresh parsley or dill, depending on your preference.
Add the grated cheeses to the mix.
Bake the Vegetable Au Gratin for 35-40 minutes at 356°F (180 degrees).
