How to cook
Chop the garlic and onion and fry them until soft in olive oil.
Peel the mango and cut it into small pieces. Put it with the fried onion together with a little salt, sugar, lemon juice, and water.
Cook until thickened, stirring constantly and finally seasoning with spices, adjusting to your taste, adding more salt for contrast, or leaving the sauce predominantly sweet.
If desired, you can puree for a smooth consistency, and for an even finer sauce - pass it through a strainer.
It can also be left so that the pieces of mango can be seen.
It also goes very well with shrimp.
