  • flour - 3 cups
  • water - 1 cup hot
  • yeast - 1/2 packet, fresh
  • salt - 1 tsp
  • sugar - 1 tsp
  • for the topping
  • lard - 1 cup pork, melted, or oil
  • butter - 3 tablespoons
  • breadcrumbs - 1 cup, not full
  • salt - 1/2 tsp


Dissolve the yeast in warm water with the sugar. Once activated, add it to the sifted flour with the salt, knead a soft dough and leave it in a warm place to rise.

Set aside 1-2 tablespoons of lard, and melt the rest along with the butter and then mix it with the breadcrumbs. You should get a medium thick paste. Using a small part of it, coat the bottom of an oven dish.

Form balls from the risen dough, smear with lard and arrange them next to each other in the tray. Thoroughly brush the top with the paste and put the Yambol buns to bake at 392°F (200 °C) for 15 minutes.
