How to cook
Heat the olive oil in a medium sized pan with a non-stick bottom and add the chopped onion.
Saute for about 3 minutes on medium heat.
Add the diced tomatoes and cook for another 1-2 minutes. Add the quinoa, salt, black pepper and about 300 milliliters of water. Stir and cover with a lid.
Cook for about 15-20 minutes, depending on the quinoa, until it absorbs all the water.
Add the finely chopped coriander and beans.
Stir and cook for another minute to heat the beans.
Squeeze the lemon directly on top. The red bean quinoa is ready.
