Sift the flour into a large bowl with the yeast and salt. Mix the warm water with olive oil and honey and add to the flour. Knead a dough for 5-8 minutes. Cover and leave it for 30 minutes to rest. Once risen, roll out the dough into a circle.
Transfer it to a buttered or laid out with baking paper tray. Mix the soft butter with the garlic and spread it evenly over the pita. Sprinkle the top with cheddar cheese, thyme and basil and put to bake in a preheated oven at 338°F (170 °C) for 30 minutes.
